This extra-long slicer packs a great deal of weight and is perfect for the chef with larger hands. The 10-inch blade is also an ideal size for carving larger turkeys, hams, or roasts (or the occasional peasant loaf). Its wavy, serrated edge slices cleanly without tearing meats, delivering slices of uniform thickness. Part of the Culinar series, a recent design addition (1999) to Wsthof's family of cutlery, this contemporary-looking knife has a blade constructed of the perfect balance of high-carbon stainless steel for strength and longer edge retention. The stain-resistant blade is hand-forged and hand-honed and then laser-ground and polished from tip to bolster to ensure precision slicing. This slicer has extraordinary heft, owed to Wsthof's signature weighted bolster. A full tang extends through the knife's sleek 18/10 satin-finish stainless-steel handle and is seamlessly encased so that this slicer appears to be constructed of a single piece of metal. This knife must be washed by hand to preserve its edge and should not be used to cut through harder materials such as bones or pits. --Cristina Vaamonde
